How to fillet a fish

This is a post about how are you going to fillet a fish step by step.

First you need these items as below:


  1. Fish
  2. Knife (preferred to have a fillet knife or small knife)


The FISH


Cut down at the back of the head of the fish


Cut at the fins (top) area to cut throught until u reach the other end of the fins (bottom)


Cut the back of the tails


At the bottom of the fin which is near the fish tummy


Now u have a piece of fish fillet but its not done.


Cut of the tummy area as this part has the most bones.
Do check and feel the fillet with your hands as they might have more bones on the fillet.

Dinner - BBQ Chicken

On 25th April 2010, I have marinated a whole chicken with BBQ spice which I got from Lulu Supermarket in Fujairah.

 The ingredients will be:
  1. Whole chicken about 800grams
  2. Schwartz Special Blend Classic Barbecue spice
  3. Salt to taste
  4. Butter (For the golden brown effect on the chicken)
Steps:
  1. De-frost chicken and wash them clean from any feathers or sort.
  2. Once clean, rub the chicken with table salt all around the chicken.
  3. Do the same with the Schwartz Special Blend Classic Barbecue spice.
  4. Place them in a container. I would prefer to place them in the fridge for at least 24 hours before I cook them. It will ensure that the flavour will penetrate into the chicken beyond the skin.
  5. After marinating, place the chicken on a glass plate which oven friendly.
  6. Apply butter onto the chickens skin to get the burn effect.
  7. Meanwhile set the oven to a temperature of 400 degree to warm up for about 10 minutes.
  8. Now turn the oven to 250 degree and place your chicken into the oven.
  9. This will take about 25 minutes to 30 minutes.






Was with my colleague, Mr. Zul. The chicken just disappear after 10 minutes. I took half and so as he~!

Dinner - Red Wine Chicken

Guys this is what I have been cooking lately~!

Here I present u what I call Grill Red Wine Chicken~!

Ingredients will be as below:

Half chicken (Halal slaughter)
Lindemans Soft Dry Red Wine about half cup
Salt for flavour

Steps:

1.Prepare a container which is large enough to place your chicken.
2.Rub salt on to the chicken. Then place the chicken into the container.
3.Pour half a cup of the red wine (any red wine will do, suit yourself).
4.Finally cover the container and place in the fridge for 6 hours or more (the longer the better ur chicken will taste).

How to cook:

1. Turn on your oven to about 400 degree for 10 minutes.
2. Lower the temperature to about 200 degree or the lowest flame on the oven.
3. I would suggest you to put butter or even olive oil on the skin so that the chicken skin will be golden brown. I grease mine with butter.
4. Place in the oven for 20 minutes at the lowest flame.
5. After 20 minutes, remove the chicken from the oven.
6. Serve the chicken on the plate.
7. Garnish assorted vegetable. (optional)
